Husk was a Dave bucket list item. I enjoyed in thoroughly, but this was for him.

You see, Sean Brock is basically Dave’s spirit animal. His style of cooking, personality, outlook on life, etc. really speaks to Dave. Anytime we see him on a show or in an interview I just know that the two of them would be friends. Maybe they should be friends! Sean Brock, are you reading this?

Anyway, over the years with Dave I’ve heard his name come up more times than I can count. “Sean Brock’s cook book is so great!” “Sean Brock is talking, shhh!” “Sean’s Brock’s grits recipe is THE BEST!” Well, if you love him so much why don’t you marry him! Heh. That’ll teach him.

Last year was Dave’s turn to choose where we go for our anniversary. He chose Charleston for one reason: Husk. Well, he had other reasons for wanting to see Charleston, but Husk was a big part of that. So, when he made his decision, the first thing I did before even booking flights was make a reservation at Husk, which is sort of a funny story in and of itself. I called to make this reservation and was disappointed I couldn’t get a reservation at a normal dinner hour on our actual anniversary despite planning this over 6 months in advance. I think we had a 5:30 dinner reservation. I told Dave and he was like, “why are we eating on a different day than our anniversary?” Goddamn it! I did it again! I always think our wedding anniversary is June 5th and it’s actually the 3rd. June 5th is one of my best friend’s birthday and it came first, so that seems to be the only June date I can ever remember. I had to admit I had the wrong date for our anniversary and called Husk right back to tell them I was wrong about my anniversary date. I was hysterically laughed at on the phone. Like, in a loving way, but also fuck that bitch a little. No, she was really nice, actually. That’s the embarrassment talking. BTW, I had to double check I got the date right as I’m typing this. I don’t know if I’ll ever be sure now.

Annndd back to Husk. From the outside, it’s basically a colonial fantasy. It’s tucked down an adorable street in historic Charleston. The building itself must have been an estate at one point. There’s a huge tree creating a canopy over white columns and casement windows, lined with flower beds, trellises and other greenery. I felt like I should be wearing a hoop skirt and carrying a fan and saying things like, “my, I might faint in this sweltering heat. If only there was a strapping, young gentleman with a mint julep!” And then taking midday naps to have a corset break.

In all actuality, it’s very unassuming. The décor inside is bright and inviting and I love the wood work in the entrance. And don’t get me started with the service. I could say lovely things all day about the staff there.

None of that truly matters though because it’s doesn’t even need it. The food speaks for itself. I think Sean Brock could serve this food out of a shack and people would still come and pay good money for it. The ambiance is what makes it a world class restaurant, but it would be successful no matter what. We ate so much food. We ate until we felt sick like two children in a candy store. EVERYTHING was good. There’s just no way you can go wrong. I still dream about the corn bread, which is really the most basic thing; it’s almost silly. There’s no real point in suggesting specific dishes as the menu is always changing. Just know that whatever you get will be delicious!

The biggest piece of advice I can give is to BOOK IN ADVANCE. This place is popular, and for good reason, so don’t think you can just walk in. There were some walk-ins in the lobby when we arrived asking for a table and they were told a 4 hour wait to MAYBE get a table. Just call and make a reservation and take literally whatever they have available. And if you can’t get a reservation, it’s totally not the end of world because you’re in Charleston. There are soooo many great restaurants there. First and foremost, Sean Brock has two more restaurants in Charleston: McCrady’s Tavern and Minero. We didn’t make it to McCrady’s, but we were able to just walk in and get a table for lunch at Minero. Otherwise, some of our other favorite restaurants in Charleston were Rodney Scott’s BBQ, Callie’s Hot Little Biscuit (currently foaming at the mouth thinking about this now), The Darling Oyster Bar, The Obstinate Daughter and Poogan’s Porch. And if you’re really wanting to treat yourself, then you just have to get sticky buns at Wild Flour Pastry. I wrote an entire blog about it here.

It’s just soooo flattering! And if you’re wondering how it made it here in the first place, it’s because it was taken across the street from the restaurant. 🙂
